The Savage Difference

Truly good food is about love and patience.  Ingredients do matter, and you can’t rush perfection.  Here are some of the unique menu items we have developed to make your event truly remarkable.  If you don’t see what you are looking for, or if you have something special in mind, don’t hesitate to ask. 


Appetizer Ideas


Wings
  These are not your fried and drowned bar food variety.  Our wings get the same care as the rest of the food.   Rub, smoke, eat.  Repeat as necessary.
   
Burnt Ends
  Always a crowd favorite...you really just can't get enough!
 
Savage Poppers
  Bacon-wrapped Jalapeño chilies stuffed with Crab Meat and Cream cheese and properly smoked.  Always a crowd favorite.
   
Filet Fingers
  A mini-version of our beef tenderloin sandwich.  Our finest beef grilled, sliced and laid to rest on a mini baguette.  Top it off with some Savage Sauce!
   
Shrimp Swords
  Tiger shrimp seasoned and grilled on a skewer.  Flatware not required.
   
Chili
   
Savage Beast Chili
  Cubed steak, pinto beans in a smoked pepper carnival.  Not for the faint of heart.
   
Chili Verde
  Green pork chili cooked down slow with Anchos and Tomatillos.  You just might think you crossed the boarder...
 
Pork
Ribs
  Three different types, same Savage flavor.  Babyback, St. Louis Style, or the full Spare Rib – you can’t wrong with any of them. We dress ‘em in our signature rub and smoke ‘em low and slow.
   
Pulled Pork
  Don’t settle for flavorless pork drowned in commercial sauce.  We rub these babies down and smoke ‘em all day long.  Fine enough to enjoy naked, but you might try it with the Savage “Beast” Sauce if you are looking for a little kick.
   
Savage Sausage
  A Savage Signature.  Handmade sausage with peppers and onions sans casing (insert joke here).  Sliced or cubed and lightly sauced.
 
Savage Special (Red & White)
  You don’t know what you are missing! This is a combo of our pulled pork and brisket served with sauce on the side.
   
Beef
   
Beef Brisket
  Brisket flat, appropriately seasoned with our special beef rub and smoked to perfection.  Art you can eat.
   
Pulled Brisket
  Oh yeah, it’s that tender.  Pork is not the only meat you can pull you know…if you have the patience. Get your mind out of the gutter.
 
Beef Short Ribs
  Did you forget that cows have ribs too?  We didn’t…and you’ll be glad we didn’t! 
   
Savage Steak
   Chili-rubbed flank steak sliced and tossed in our Savage Sauce.
   
Beef Tenderloin
  If you haven't tried a smoked beef tenderloin, you don't know what you are missing.  All the tenderness you expect from your filet, with twice the flavor.
   
Beef Tenderloin Sandwich
  Two-handed filet mignon.  Choice tenderloin gilled, sliced and paired with freshly baked bread.  Enough said.
   
Cabernet Brisket
  Brisket flat, rubbed and smoked to perfection and finished with a cabernet braise and reduction. You may never view BBQ the same again…
   
   
Poultry
Whole Chicken
  The whole bird. This rub has a little twist to it, and we finish with a Savage-based glaze.  Tastes like more.
   
Half Chicken
  See above.  You do the math.
   
Chicken Thighs
  See above.  You do the anatomy.
   
Wings
  Yeah, these are good enough to be a meal on their own.  Tell us how many you want.
   
Seafood
Savage Smoked Salmon
  Not that greasy stuff you buy at the store.  This is a fresh filet, properly prepared and smoked. The fact that it’s not meat almost seems wrong, but it’s too good to leave off the menu!
   
Smoked Mussels
  If you like mussels, then these are a must-have.  We almost hate to put these on the menu just so we can keep them a secret.  Dependant on market availability.
   
Sides
Beans
  Is it even legal to have BBQ without beans?  We weren’t sure, so we went ahead and made sure we had a top-notch recipe for them too.  Baked, smoked, sauced…the beans benefit from it all.  
   
Savage Slaw
  Our signature slaw recipe, always made fresh. 
   
Cheesy Potatoes
  Comfort food at its finest.
Sauce
Savage “Punk” Sauce
  For those who can’t handle the “Beast”.
